π§ Ingredients (2 servings):
- 200g pasta (penne or spaghetti)
- 1 tbsp olive oil
- 2 garlic cloves (minced)
- 1 cup roasted red peppers (jarred or homemade, chopped)
- 2 tbsp cream cheese or ΒΌ cup heavy cream (optional for creaminess)
- Salt & pepper to taste
- Β½ tsp chili flakes (optional)
- Parmesan cheese for topping (optional)
π Instructions:
- Boil pasta in salted water according to package directions (about 8-10 mins). While it cooks, make the sauce.
- In a pan, heat olive oil, then add garlic and cook for 30 seconds until fragrant.
- Add the chopped roasted red peppers, cook for 1-2 mins.
- Add cream cheese or cream (optional), and cook for another 1-2 mins until warmed through.
- Blend the sauce (use an immersion blender or transfer to a blender) until smooth. Season with salt, pepper, and chili flakes.
- Drain pasta, reserve a little pasta water.
- Mix pasta with the sauce in the pan. Add a splash of pasta water if needed to thin it out.
- Serve with Parmesan cheese on top.

- Use pre-cooked or jarred roasted red peppers to save time.
- You can add cooked chicken or spinach if you want protein or greens.
